Ingredients
- Lamb shoulder - 400 grams, diced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Baking potatoes - 2 medium (about 300 grams each)
- Tomato sauce - 150 grams
- Plain yogurt - 100 grams
- Fresh parsley - 2 tablespoons, chopped
- Lemon - 1, juiced
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, combine diced lamb, olive oil, minced garlic, ground cumin, paprika, salt, black pepper, and lemon juice. Marinate for at least 30 minutes.
- While the lamb is marinating, wash and pierce the baking potatoes with a fork. Place them on a baking tray and bake for 45 minutes or until tender.
- In a skillet, heat a little olive oil over medium heat. Add the marinated lamb and cook for about 15-20 minutes until browned and cooked through.
- In a saucepan, heat the tomato sauce over low heat until warm, stirring occasionally.
- Once the potatoes are baked, cut them open lengthwise and fluff the insides with a fork.
- Top each potato with the cooked lamb, drizzle with warm tomato sauce, and add a generous spoonful of plain yogurt.
- Garnish with chopped fresh parsley and serve immediately.
