Ingredients

  • Lamb shoulder - 400 grams, diced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Baking potatoes - 2 medium (about 300 grams each)
  • Tomato sauce - 150 grams
  • Plain yogurt - 100 grams
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon - 1, juiced

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, combine diced lamb, olive oil, minced garlic, ground cumin, paprika, salt, black pepper, and lemon juice. Marinate for at least 30 minutes.
  3. While the lamb is marinating, wash and pierce the baking potatoes with a fork. Place them on a baking tray and bake for 45 minutes or until tender.
  4. In a skillet, heat a little olive oil over medium heat. Add the marinated lamb and cook for about 15-20 minutes until browned and cooked through.
  5. In a saucepan, heat the tomato sauce over low heat until warm, stirring occasionally.
  6. Once the potatoes are baked, cut them open lengthwise and fluff the insides with a fork.
  7. Top each potato with the cooked lamb, drizzle with warm tomato sauce, and add a generous spoonful of plain yogurt.
  8. Garnish with chopped fresh parsley and serve immediately.
