- Lamb shoulder - 300 grams, diced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Ground cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Potatoes - 2 large (about 300 grams each)
- Butter - 2 tablespoons
- Yogurt - 100 grams
- Chopped fresh parsley - 2 tablespoons
- Sliced green onions - 2 tablespoons
- Red chili flakes - 1/2 teaspoon
Steps
- Preheat your grill or BBQ to medium-high heat.
- In a bowl, combine diced lamb, olive oil, minced garlic, ground cumin, smoked paprika, salt, black pepper, and lemon juice. Mix well and marinate for at least 30 minutes.
- While the lamb is marinating, wash the potatoes and pierce them with a fork several times. Bake them in the preheated oven at 200°C (390°F) for about 45 minutes or until tender.
- Once the potatoes are done, remove them from the oven, cut them open, and scoop out a small portion of the flesh to make space for the filling.
- In a bowl, mix the scooped potato flesh with butter, yogurt, chopped parsley, and sliced green onions. Season with salt and pepper to taste.
- Thread the marinated lamb onto skewers, then grill the skewers for about 10-12 minutes, turning occasionally until they are cooked to your desired doneness.
- To serve, fill the baked potatoes with the potato mixture and place the grilled lamb skewers on the side. Sprinkle with red chili flakes for an extra kick.
