- Baking potatoes - 2 medium
- Butter - 2 tablespoons
- Cheddar cheese - 50 grams, grated
- Chives - 2 tablespoons, chopped
- Salt and pepper to taste
Steps
- In a mixing bowl, combine olive oil, Greek yogurt, minced garlic, paprika, cumin, salt, black pepper, and lemon juice to create a marinade.
- Add the cubed lamb shoulder to the marinade, mix well, and let it marinate in the refrigerator for at least 30 minutes.
- Preheat the grill or BBQ to medium-high heat.
- While the lamb is marinating, scrub the baking potatoes and pierce them with a fork several times.
- Wrap each potato in aluminum foil and bake in the oven at 200°C (390°F) for about 45 minutes or until tender.
- Once the lamb is marinated, thread the cubes onto skewers.
- Grill the skewers for about 12-15 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
- After the potatoes are done, carefully unwrap them, and fluff the insides with a fork.
- Add butter, grated cheddar cheese, salt, pepper, and chopped chives to the potatoes, mixing until creamy.
- Serve the grilled lamb skewers alongside the loaded baked potatoes.
