Ingredients

  • Lamb shoulder - 300 grams, cubed
  • Olive oil - 2 tablespoons
  • Greek yogurt - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Baking potatoes - 2 medium
  • Butter - 2 tablespoons
  • Cheddar cheese - 50 grams, grated
  • Chives - 2 tablespoons, chopped
  • Salt and pepper to taste

Steps

  1. In a mixing bowl, combine olive oil, Greek yogurt, minced garlic, paprika, cumin, salt, black pepper, and lemon juice to create a marinade.
  2. Add the cubed lamb shoulder to the marinade, mix well, and let it marinate in the refrigerator for at least 30 minutes.
  3. Preheat the grill or BBQ to medium-high heat.
  4. While the lamb is marinating, scrub the baking potatoes and pierce them with a fork several times.
  5. Wrap each potato in aluminum foil and bake in the oven at 200°C (390°F) for about 45 minutes or until tender.
  6. Once the lamb is marinated, thread the cubes onto skewers.
  7. Grill the skewers for about 12-15 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
  8. After the potatoes are done, carefully unwrap them, and fluff the insides with a fork.
  9. Add butter, grated cheddar cheese, salt, pepper, and chopped chives to the potatoes, mixing until creamy.
  10. Serve the grilled lamb skewers alongside the loaded baked potatoes.
