Ingredients

  • Lamb shoulder - 400 grams, cubed
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Bell pepper - 1 medium, diced
  • Red onion - 1 small, diced
  • Tomato - 1 medium, diced
  • Baked potatoes - 2 large
  • Chopped parsley - 2 tablespoons

Steps

  1. Preheat your grill or BBQ to medium-high heat.
  2. In a bowl, mix the olive oil, minced garlic, ground cumin, paprika, salt, black pepper, and lemon juice to create a marinade.
  3. Add the cubed lamb shoulder to the marinade, ensuring each piece is well-coated. Let it marinate for at least 30 minutes.
  4. While the lamb is marinating, wash the potatoes and pierce them with a fork. Bake in the oven at 200°C for about 40 minutes or until tender.
  5. After marinating, thread the lamb cubes onto skewers, alternating with diced bell pepper and red onion.
  6. Grill the skewers on the BBQ for about 10-12 minutes, turning occasionally until cooked to your liking.
  7. Once the potatoes are baked, remove them from the oven and let them cool slightly. Cut them in half and scoop out some of the flesh.
  8. Mix the scooped potato flesh with diced tomato, chopped parsley, and a pinch of salt. Stuff this mixture back into the potato skins.
  9. Serve the grilled lamb skewers alongside the stuffed baked potatoes.
