- Lamb shoulder - 400 grams, cubed

- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Bell pepper - 1 medium, diced
- Red onion - 1 small, diced
- Tomato - 1 medium, diced
- Baked potatoes - 2 large
- Chopped parsley - 2 tablespoons
Steps
- Preheat your grill or BBQ to medium-high heat.
- In a bowl, mix the olive oil, minced garlic, ground cumin, paprika, salt, black pepper, and lemon juice to create a marinade.
- Add the cubed lamb shoulder to the marinade, ensuring each piece is well-coated. Let it marinate for at least 30 minutes.
- While the lamb is marinating, wash the potatoes and pierce them with a fork. Bake in the oven at 200°C for about 40 minutes or until tender.
- After marinating, thread the lamb cubes onto skewers, alternating with diced bell pepper and red onion.
- Grill the skewers on the BBQ for about 10-12 minutes, turning occasionally until cooked to your liking.
- Once the potatoes are baked, remove them from the oven and let them cool slightly. Cut them in half and scoop out some of the flesh.
- Mix the scooped potato flesh with diced tomato, chopped parsley, and a pinch of salt. Stuff this mixture back into the potato skins.
- Serve the grilled lamb skewers alongside the stuffed baked potatoes.
