Ingredients

  • Sweet potatoes - 2 medium (about 300g each)
  • Lamb shoulder - 200g, diced
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, finely chopped
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 medium, chopped
  • Rosemary - 1 teaspoon, fresh or 1/2 teaspoon dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Chicken broth - 100ml
  • Parsley - for garnish, chopped

Steps

  1. Preheat the oven to 200°C (390°F).
  2. Wash and pierce the sweet potatoes with a fork. Place them on a baking tray and bake for about 45 minutes or until tender.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
  4. Add the diced lamb shoulder to the skillet, browning it on all sides for about 5-7 minutes.
  5. Stir in the diced carrot and bell pepper, cooking for an additional 5 minutes until slightly softened.
  6. Add the chopped tomato, rosemary, salt, black pepper, and paprika. Mix well and pour in the chicken broth.
  7. Reduce the heat to low and let the mixture simmer for about 15 minutes until the lamb is tender and the flavors meld.
  8. Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly. Cut them in half lengthwise and fluff the insides with a fork.
  9. Spoon the lamb mixture generously into each sweet potato half.
  10. Garnish with chopped parsley before serving.
