- Sweet potatoes - 2 medium (about 300g each)
- Lamb shoulder - 200g, diced
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Carrot - 1 medium, diced
- Bell pepper - 1 medium, diced
- Tomato - 1 medium, chopped
- Rosemary - 1 teaspoon, fresh or 1/2 teaspoon dried
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Chicken broth - 100ml
- Parsley - for garnish, chopped
Steps
- Preheat the oven to 200°C (390°F).
- Wash and pierce the sweet potatoes with a fork. Place them on a baking tray and bake for about 45 minutes or until tender.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion becomes translucent.
- Add the diced lamb shoulder to the skillet, browning it on all sides for about 5-7 minutes.
- Stir in the diced carrot and bell pepper, cooking for an additional 5 minutes until slightly softened.
- Add the chopped tomato, rosemary, salt, black pepper, and paprika. Mix well and pour in the chicken broth.
- Reduce the heat to low and let the mixture simmer for about 15 minutes until the lamb is tender and the flavors meld.
- Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly. Cut them in half lengthwise and fluff the insides with a fork.
- Spoon the lamb mixture generously into each sweet potato half.
- Garnish with chopped parsley before serving.
