  • Fresh thyme - 1 tablespoon, chopped
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Bell peppers - 1 medium, cut into squares
  • Red onion - 1 small, cut into wedges

Steps

  1. In a large bowl, combine olive oil, minced garlic, chopped rosemary, chopped thyme, paprika, cumin, salt, black pepper, and lemon juice to create a marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated lamb, bell peppers, and red onion onto skewers, alternating between ingredients.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
