Ingredients

  • Lamb shoulder, boneless - 400 grams
  • Garlic, minced - 2 cloves
  • Ground cumin - 1 teaspoon
  • Ground black pepper - 1 teaspoon
  • Salt - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Lavash bread - 2 pieces
  • Tomato, diced - 1 medium
  • Red bell pepper, diced - 1 medium
  • Onion, finely chopped - 1 small
  • Fresh parsley, chopped - 2 tablespoons
  • Yogurt - 100 grams
  • Lemon juice - 1 tablespoon

Steps

  1. Start by cutting the lamb shoulder into small cubes and place them in a bowl.
  2. Add minced garlic, ground cumin, black pepper, salt, and 1 tablespoon of olive oil to the lamb. Mix well and let it marinate for at least 30 minutes.
  3. While the lamb is marinating, prepare the sauce by heating the remaining olive oil in a pan over medium heat. Add the chopped onion and sauté until translucent.
  4. Add the diced tomatoes and red bell pepper to the pan, and cook for about 10 minutes until softened. Season with salt and pepper to taste, then remove from heat.
  5. Preheat the grill or a grill pan over medium-high heat. Thread the marinated lamb onto skewers and grill for 10-12 minutes, turning occasionally, until the meat is cooked to your desired doneness.
  6. While the lamb is grilling, warm the lavash bread on the grill for a minute on each side.
  7. Once the lamb is cooked, remove it from the skewers and place it on the warmed lavash bread. Drizzle with lemon juice.
  8. Roll the lavash tightly around the lamb, then slice the wrapped kebab in half.
  9. Serve the kebabs with the tomato sauce on the side and a dollop of yogurt topped with fresh parsley.
