- Lamb shoulder, boneless - 400 grams
- Garlic, minced - 2 cloves
- Ground cumin - 1 teaspoon
- Ground black pepper - 1 teaspoon
- Salt - 1 teaspoon
- Olive oil - 2 tablespoons
- Lavash bread - 2 pieces
- Tomato, diced - 1 medium
- Red bell pepper, diced - 1 medium
- Onion, finely chopped - 1 small
- Fresh parsley, chopped - 2 tablespoons
- Yogurt - 100 grams
- Lemon juice - 1 tablespoon
Steps
- Start by cutting the lamb shoulder into small cubes and place them in a bowl.
- Add minced garlic, ground cumin, black pepper, salt, and 1 tablespoon of olive oil to the lamb. Mix well and let it marinate for at least 30 minutes.
- While the lamb is marinating, prepare the sauce by heating the remaining olive oil in a pan over medium heat. Add the chopped onion and sauté until translucent.
- Add the diced tomatoes and red bell pepper to the pan, and cook for about 10 minutes until softened. Season with salt and pepper to taste, then remove from heat.
- Preheat the grill or a grill pan over medium-high heat. Thread the marinated lamb onto skewers and grill for 10-12 minutes, turning occasionally, until the meat is cooked to your desired doneness.
- While the lamb is grilling, warm the lavash bread on the grill for a minute on each side.
- Once the lamb is cooked, remove it from the skewers and place it on the warmed lavash bread. Drizzle with lemon juice.
- Roll the lavash tightly around the lamb, then slice the wrapped kebab in half.
- Serve the kebabs with the tomato sauce on the side and a dollop of yogurt topped with fresh parsley.
