- Yogurt - 150 grams
- Eggplant - 1 medium

- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley, chopped - 2 tablespoons
- Pita bread - 2 pieces
Steps
- Preheat the grill to medium-high heat.
- In a bowl, combine the cubed lamb with olive oil, lemon juice, cumin, paprika, salt, and black pepper. Mix well and let marinate for at least 20 minutes.
- While the lamb is marinating, roast the eggplant over the grill or an open flame until the skin is charred and the flesh is soft, about 15-20 minutes. Let it cool, then scoop the flesh into a bowl.
- Add minced garlic and yogurt to the eggplant flesh. Mix until well combined and season with salt to taste.
- Thread the marinated lamb onto skewers and grill for about 8-10 minutes, turning occasionally, until cooked to your desired doneness.
- Warm the pita bread on the grill for 1-2 minutes, flipping halfway through.
- To serve, place a generous scoop of the eggplant yogurt mixture on a plate, top with grilled lamb skewers, and sprinkle with chopped parsley. Serve with warm pita bread on the side.
