- Lamb shoulder - 300 grams, ground
- Eggplant - 2 medium, halved lengthwise
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato - 1 medium, diced
- Red bell pepper - 1, diced
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat the oven to 180°C (350°F).
- Slice the eggplants in half lengthwise, sprinkle with salt, and let them sit for 15 minutes to draw out excess moisture.
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the ground lamb to the skillet and cook until browned, breaking it apart with a spatula.
- Stir in the diced tomato, red bell pepper, cumin, paprika, salt, and black pepper. Cook until the vegetables soften, about 5-7 minutes.
- Remove from heat and mix in the chopped parsley.
- Rinse the eggplants under cold water to remove excess salt, then pat them dry.
- In a baking dish, place the eggplant halves cut-side up and drizzle with the remaining olive oil.
- Stuff each eggplant half with the lamb mixture, pressing it down gently.
- Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until the eggplants are tender and the tops are slightly browned.
- Serve warm, garnished with additional parsley if desired.
