Ingredients

  • Lamb shoulder - 400 grams
  • Olive oil - 2 tablespoons
  • Greek yogurt - 100 grams
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Bell pepper - 1 medium, cut into chunks
  • Zucchini - 1 medium, sliced
  • Cherry tomatoes - 100 grams

Steps

  1. Cut the lamb shoulder into 2.5 cm cubes and place them in a mixing bowl.
  2. In a separate bowl, combine olive oil, Greek yogurt, minced garlic, paprika, cumin, black pepper, salt, and lemon juice to create a marinade.
  3. Pour the marinade over the lamb cubes, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.
  4. Preheat your grill or BBQ to medium-high heat.
  5. Thread the marinated lamb cubes, bell pepper chunks, zucchini slices, and cherry tomatoes onto skewers, alternating ingredients.
  6. Grill the skewers for about 10-15 minutes, turning occasionally, until the lamb is cooked to your desired doneness and has nice grill marks.
  7. Remove the skewers from the grill and let them rest for 5 minutes.
  8. Garnish with chopped fresh parsley before serving.
