Ingredients

  • Lamb shoulder - 300 grams, cut into 2.5 cm cubes
  • Olive oil - 2 tablespoons
  • Greek yogurt - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh rosemary - 1 teaspoon, chopped
  • Lemon juice - 1 tablespoon
  • Bell pepper - 1 medium, cut into 2.5 cm pieces
  • Zucchini - 1 medium, cut into 2.5 cm pieces
  • Cherry tomatoes - 100 grams

Steps

  1. In a bowl, combine the olive oil, Greek yogurt, minced garlic, ground cumin, paprika, salt, black pepper, chopped rosemary, and lemon juice to create a marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes, or up to overnight for better flavor.
  3. Preheat your grill or BBQ to medium-high heat.
  4. While the grill is heating, prepare the skewers by alternating the marinated lamb with bell pepper, zucchini, and cherry tomatoes.
  5. Once the grill is hot, place the skewers on it and cook for about 10-12 minutes, rotating occasionally, until the lamb is cooked to your desired level of doneness.
  6. Remove the skewers from the grill and let them rest for a few minutes before serving.
