  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a bowl, combine olive oil, minced garlic, paprika, cumin, oregano, salt, black pepper, and lemon juice to create a marinade.
  2. Thoroughly coat the lamb heads with the marinade, ensuring all parts are well covered. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Prepare your BBQ grill for medium-high heat. If using charcoal, let the coals ash over until they're glowing.
  4. Remove the lamb heads from the marinade and let them sit at room temperature for about 30 minutes.
  5. Place the lamb heads on the grill. Cook for about 25-30 minutes, turning occasionally, until the meat is tender and slightly charred.
  6. Once cooked, remove from the grill and let rest for 10 minutes before serving. Garnish with fresh chopped parsley.
