Ingredients

  • Lamb shoulder - 300 grams, diced
  • Cauliflower - 200 grams, riced
  • Cucumber - 100 grams, diced
  • Tomato - 100 grams, diced
  • Red onion - 50 grams, finely chopped
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Garlic - 1 clove, minced

Steps

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced lamb shoulder and season with salt, black pepper, and paprika. Cook until browned and cooked through, about 15-20 minutes.
  2. Remove the cooked lamb from the skillet and set aside. In the same skillet, add the minced garlic and cook for 1 minute until fragrant.
  3. Add the riced cauliflower to the skillet and sauté for about 5-7 minutes until tender. Remove from heat and let cool slightly.
  4. In a large bowl, combine the cooked lamb, riced cauliflower, diced cucumber, diced tomato, red onion, parsley, and mint.
  5. In a small bowl, whisk together the lemon juice and remaining tablespoon of olive oil. Pour over the lamb and vegetable mixture and toss to combine.
  6. Taste and adjust seasoning if necessary. Serve warm or at room temperature.
