Ingredients

  • Lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Yogurt (unsweetened, full-fat) - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 1 tablespoon, chopped (for garnish)
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. In a bowl, combine the olive oil, minced garlic, yogurt, lemon juice, paprika, cumin, salt, and black pepper to create a marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight for optimal flavor.
  3. Preheat your grill or barbecue to medium-high heat.
  4. Thread the marinated lamb cubes onto the skewers, leaving a little space between each piece.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the lamb is browned and cooked to your desired level of doneness.
  6. Remove the skewers from the grill and let them rest for a few minutes before serving.
  7. Garnish with chopped fresh parsley before serving and enjoy your Kuzu Kuzu Şişte.
