Ingredients

  • Lamb shoulder - 300 grams, cubed
  • Olive oil - 2 tablespoons
  • Greek yogurt - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 1 tablespoon
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. In a large bowl, combine olive oil, Greek yogurt, minced garlic, lemon juice, paprika, cumin, salt, and black pepper to create a marinade.
  2. Add the cubed lamb shoulder to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 1 hour, preferably overnight for better flavor.
  3. Preheat your grill or barbecue to medium-high heat.
  4. Thread the marinated lamb onto the skewers, leaving a little space between each piece for even cooking.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the lamb is browned and cooked to your liking.
  6. Remove from the grill and let rest for a few minutes before serving, garnished with chopped parsley.
