Ingredients

  • Lamb shoulder - 400 grams, cut into cubes
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Tomato - 1 medium, chopped
  • Bay leaf - 1
  • Thyme - 1 teaspoon, dried
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Beef or lamb broth - 500 milliliters
  • Parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and sauté for another minute until fragrant.
  3. Increase the heat to medium-high and add the lamb cubes. Brown the lamb on all sides, about 8-10 minutes.
  4. Stir in the diced carrot, red bell pepper, and chopped tomato. Cook for an additional 5 minutes.
  5. Add the bay leaf, thyme, cumin, salt, black pepper, and broth. Stir well to combine.
  6. Bring the mixture to a boil, then reduce the heat to low and cover. Simmer for about 60 minutes, or until the lamb is tender.
  7. Remove the bay leaf and adjust seasoning if necessary. Serve hot, garnished with chopped parsley.
