- Lamb shoulder - 400 grams, cut into cubes
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Tomato - 1 medium, chopped
- Bay leaf - 1
- Thyme - 1 teaspoon, dried
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Beef or lamb broth - 500 milliliters
- Parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Increase the heat to medium-high and add the lamb cubes. Brown the lamb on all sides, about 8-10 minutes.
- Stir in the diced carrot, red bell pepper, and chopped tomato. Cook for an additional 5 minutes.
- Add the bay leaf, thyme, cumin, salt, black pepper, and broth. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to low and cover. Simmer for about 60 minutes, or until the lamb is tender.
- Remove the bay leaf and adjust seasoning if necessary. Serve hot, garnished with chopped parsley.
