  • Zucchini - 1 medium, diced

  • Lamb or beef broth - 500 ml
  • Dried thyme - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a heavy-bottomed pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the cubed lamb shoulder to the pot and brown on all sides, about 8-10 minutes.
  5. Incorporate the sliced carrot, diced red bell pepper, and diced zucchini, cooking for another 5 minutes.
  6. Stir in the chopped tomatoes, tomato paste, dried thyme, paprika, salt, and black pepper.
  7. Pour in the lamb or beef broth, bringing the mixture to a gentle boil.
  8. Reduce heat to low, cover the pot, and let it simmer for 60 minutes, stirring occasionally.
  9. Once the lamb is tender and flavors melded, remove from heat and let it rest for a few minutes.
