Ingredients

  • Lamb shoulder - 500 grams
  • Garlic - 4 cloves, minced
  • Onion - 1 medium, chopped
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Tomato - 1 large, chopped
  • Olive oil - 2 tablespoons
  • Fresh thyme - 1 teaspoon, chopped
  • Fresh rosemary - 1 teaspoon, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water or bone broth - 250 ml

Steps

  1. Preheat the oven to 150°C (300°F).
  2. In a large oven-safe pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until softened.
  3. Add the diced carrot, red bell pepper, and zucchini to the pot, stirring for about 5 minutes until they begin to soften.
  4. Season the vegetables with salt, black pepper, thyme, and rosemary, then stir to combine.
  5. Cut the lamb shoulder into large chunks and add it to the pot, browning it on all sides for about 5-7 minutes.
  6. Add the chopped tomato and water or bone broth, ensuring the meat and vegetables are covered.
  7. Bring the mixture to a simmer, then cover the pot with a lid and transfer it to the preheated oven.
  8. Bake for about 1.5 hours, or until the lamb is tender and falls apart easily.
  9. Remove from the oven, let it rest for a few minutes, then serve hot.
