- Lamb shoulder - 500 grams
- Garlic - 4 cloves, minced
- Onion - 1 medium, chopped
- Carrot - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Tomato - 1 large, chopped
- Olive oil - 2 tablespoons
- Fresh thyme - 1 teaspoon, chopped
- Fresh rosemary - 1 teaspoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water or bone broth - 250 ml
Steps
- Preheat the oven to 150°C (300°F).
- In a large oven-safe pot, heat the olive oil over medium heat and sauté the chopped onion and minced garlic until softened.
- Add the diced carrot, red bell pepper, and zucchini to the pot, stirring for about 5 minutes until they begin to soften.
- Season the vegetables with salt, black pepper, thyme, and rosemary, then stir to combine.
- Cut the lamb shoulder into large chunks and add it to the pot, browning it on all sides for about 5-7 minutes.
- Add the chopped tomato and water or bone broth, ensuring the meat and vegetables are covered.
- Bring the mixture to a simmer, then cover the pot with a lid and transfer it to the preheated oven.
- Bake for about 1.5 hours, or until the lamb is tender and falls apart easily.
- Remove from the oven, let it rest for a few minutes, then serve hot.
