Ingredients
- Lamb shoulder, ground - 300 grams
- Grape leaves, jarred - 12 leaves
- Onion, finely chopped - 1 medium (about 100 grams)
- Garlic, minced - 2 cloves
- Parsley, chopped - 2 tablespoons
- Mint, chopped - 1 tablespoon
- Dill, chopped - 1 tablespoon
- Tomato paste - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Chicken or vegetable broth - 250 ml
Steps
- 1. Rinse the grape leaves under cold water and soak them in hot water for 10 minutes to soften, then drain.
- 2. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 5 minutes.
- 3. In a bowl, combine ground lamb, sautéed onion and garlic, parsley, mint, dill, tomato paste, salt, black pepper, cinnamon, and lemon juice. Mix well until all ingredients are evenly incorporated.
- 4. Lay a grape leaf on a flat surface, stem side facing you. Place 1-2 tablespoons of the lamb mixture at the base of the leaf, fold in the sides, and roll tightly to form a dolma. Repeat with remaining leaves and filling.
- 5. In a large pot, arrange the stuffed grape leaves seam side down. Pour the chicken or vegetable broth over the dolmas and drizzle with the remaining tablespoon of olive oil.
- 6. Cover the pot with a lid and simmer on low heat for about 30 minutes, or until the lamb is cooked through and the flavors meld.
- 7. Serve warm, garnished with additional fresh herbs if desired.
