Ingredients

  • Lamb shoulder, ground - 300 grams
  • Grape leaves, jarred - 12 leaves
  • Onion, finely chopped - 1 medium (about 100 grams)
  • Garlic, minced - 2 cloves
  • Parsley, chopped - 2 tablespoons
  • Mint, chopped - 1 tablespoon
  • Dill, chopped - 1 tablespoon
  • Tomato paste - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Chicken or vegetable broth - 250 ml

Steps

  1. 1. Rinse the grape leaves under cold water and soak them in hot water for 10 minutes to soften, then drain.
  2. 2. In a skillet, heat 1 tablespoon of olive oil over medium heat and sauté the chopped onion and minced garlic until translucent, about 5 minutes.
  3. 3. In a bowl, combine ground lamb, sautéed onion and garlic, parsley, mint, dill, tomato paste, salt, black pepper, cinnamon, and lemon juice. Mix well until all ingredients are evenly incorporated.
  4. 4. Lay a grape leaf on a flat surface, stem side facing you. Place 1-2 tablespoons of the lamb mixture at the base of the leaf, fold in the sides, and roll tightly to form a dolma. Repeat with remaining leaves and filling.
  5. 5. In a large pot, arrange the stuffed grape leaves seam side down. Pour the chicken or vegetable broth over the dolmas and drizzle with the remaining tablespoon of olive oil.
  6. 6. Cover the pot with a lid and simmer on low heat for about 30 minutes, or until the lamb is cooked through and the flavors meld.
  7. 7. Serve warm, garnished with additional fresh herbs if desired.
