Ingredients

  • Lamb shoulder - 300 grams, cut into bite-sized pieces
  • Olive oil - 2 tablespoons
  • Yogurt - 100 grams
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon juice - 1 tablespoon
  • Gluten-free flatbreads - 2 pieces
  • Fresh parsley - for garnish
  • Tomato - 1, diced
  • Onion - 1 small, thinly sliced
  • Green pepper - 1, sliced

Steps

  1. In a bowl, combine olive oil, yogurt, minced garlic, paprika, cumin, oregano, salt, black pepper, and lemon juice to create a marinade.
  2. Add the lamb pieces to the marinade, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes (or up to overnight for more flavor).
  3. Preheat a grill or barbecue to medium-high heat.
  4. Thread the marinated lamb onto skewers, alternating with slices of onion and green pepper.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the lamb is cooked through and slightly charred.
  6. Warm the gluten-free flatbreads on the grill for a minute on each side.
  7. To assemble, place the grilled lamb skewers on the flatbreads, add diced tomatoes, and sprinkle with fresh parsley.
  8. Wrap the flatbreads around the filling to create a dürüm and serve immediately.
