  • Lamb shoulder - 400 grams
  • Greek yogurt - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - ½ teaspoon
  • Lemon juice - 1 tablespoon
  • Cucumber - 100 grams, diced
  • Tomato - 100 grams, diced
  • Red onion - 50 grams, thinly sliced
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Cut the lamb shoulder into thin slices and place them in a bowl.
  2. In a separate bowl, mix the Greek yogurt, olive oil, minced garlic, ground cumin, paprika, dried oregano, salt, black pepper, and lemon juice to create the marinade.
  3. Pour the marinade over the lamb slices, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, preferably overnight.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Remove the lamb from the marinade and thread the slices onto skewers.
  6. Grill the lamb skewers for about 4-5 minutes on each side until cooked through and nicely charred.
  7. While the lamb is grilling, prepare a fresh salad with diced cucumber, tomato, red onion, and chopped parsley. Drizzle with a little olive oil and season with salt and pepper.
  8. Serve the grilled lamb skewers with the salad on the side.
