- Lamb shoulder - 400 grams
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 3 cloves, minced
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Pita bread - 2 pieces
- Tomato - 1, sliced
- Cucumber - 1, sliced
- Red onion - 1/2, thinly sliced
- Fresh parsley - a handful, chopped
Steps
- Cut the lamb shoulder into thin slices, about 1 cm thick, for even marination and cooking.
- In a bowl, mix together olive oil, lemon juice, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper to create a marinade.
- Add the sliced lamb to the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 30 minutes, preferably 2 hours for deeper flavor.
- Preheat a grill or grill pan over medium-high heat.
- Remove the lamb from the refrigerator and thread the marinated slices onto skewers.
- Grill the lamb skewers for about 10-12 minutes, turning occasionally, until nicely charred and cooked to your desired doneness.
- While the lamb is grilling, warm the pita bread on the grill for about 1 minute on each side until slightly toasted.
- Once grilled, remove the lamb from skewers and slice into smaller pieces if desired.
- Serve the grilled lamb in the warm pita bread topped with sliced tomatoes, cucumbers, red onions, and chopped parsley.
