Ingredients

  • Lamb shoulder - 400 grams
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Pita bread - 2 pieces
  • Tomato - 1, sliced
  • Cucumber - 1, sliced
  • Red onion - 1/2, thinly sliced
  • Fresh parsley - a handful, chopped

Steps

  1. Cut the lamb shoulder into thin slices, about 1 cm thick, for even marination and cooking.
  2. In a bowl, mix together olive oil, lemon juice, minced garlic, ground cumin, ground coriander, paprika, salt, and black pepper to create a marinade.
  3. Add the sliced lamb to the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 30 minutes, preferably 2 hours for deeper flavor.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Remove the lamb from the refrigerator and thread the marinated slices onto skewers.
  6. Grill the lamb skewers for about 10-12 minutes, turning occasionally, until nicely charred and cooked to your desired doneness.
  7. While the lamb is grilling, warm the pita bread on the grill for about 1 minute on each side until slightly toasted.
  8. Once grilled, remove the lamb from skewers and slice into smaller pieces if desired.
  9. Serve the grilled lamb in the warm pita bread topped with sliced tomatoes, cucumbers, red onions, and chopped parsley.
