Ingredients
- Lamb shoulder - 300 grams, ground
- Red bell peppers - 2 medium, halved and seeded
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Tomato paste - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Cauliflower rice - 100 grams, cooked (optional for serving)
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
- Add minced garlic and sauté for another 1-2 minutes until fragrant.
- In a large bowl, combine the ground lamb, sautéed onion and garlic, tomato paste, cumin, paprika, salt, black pepper, and chopped parsley. Mix thoroughly.
- Stuff each half of the red bell peppers with the lamb mixture, pressing down gently to pack it in.
- Place the stuffed peppers in a baking dish and drizzle with a little extra olive oil if desired.
- Cover the baking dish with foil and bake in the preheated oven for 35-40 minutes.
- Remove the foil and bake for an additional 10 minutes to brown the tops.
- Serve hot, optionally over a bed of cauliflower rice.
