Ingredients

  • Lamb shoulder - 300 grams, ground
  • Red bell peppers - 2 medium, halved and seeded
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Tomato paste - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Cauliflower rice - 100 grams, cooked (optional for serving)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat and sauté the chopped onion until translucent, about 5 minutes.
  3. Add minced garlic and sauté for another 1-2 minutes until fragrant.
  4. In a large bowl, combine the ground lamb, sautéed onion and garlic, tomato paste, cumin, paprika, salt, black pepper, and chopped parsley. Mix thoroughly.
  5. Stuff each half of the red bell peppers with the lamb mixture, pressing down gently to pack it in.
  6. Place the stuffed peppers in a baking dish and drizzle with a little extra olive oil if desired.
  7. Cover the baking dish with foil and bake in the preheated oven for 35-40 minutes.
  8. Remove the foil and bake for an additional 10 minutes to brown the tops.
  9. Serve hot, optionally over a bed of cauliflower rice.
