Ingredients

  • Ground lamb - 300 grams
  • Garlic - 2 cloves, minced
  • Parsley - 2 tablespoons, finely chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Lettuce leaves - 4 large
  • Tomato - 1 medium, diced
  • Cucumber - 1 medium, diced
  • Red onion - 1/2, thinly sliced
  • Lemon - 1, cut into wedges

Steps

  1. In a large bowl, combine ground lamb, minced garlic, parsley, cumin, paprika, salt, and black pepper. Mix well until all ingredients are evenly incorporated.
  2. Divide the meat mixture into 4 equal portions and shape each portion into long, thin kebabs around skewers.
  3. Preheat a grill or grill pan over medium heat and brush with olive oil to prevent sticking.
  4. Grill the kebabs for about 8-10 minutes, turning occasionally, until they are browned and cooked through.
  5. While the kebabs are grilling, prepare the salad by mixing diced tomato, cucumber, and sliced red onion in a bowl. Drizzle with olive oil and season with salt and pepper to taste.
  6. Once the kebabs are done, remove them from the grill and let them rest for a few minutes.
  7. Serve the kebabs wrapped in lettuce leaves, accompanied by the salad, and lemon wedges on the side.
