Ingredients

  • Ground lamb - 300 grams
  • Garlic - 2 cloves, minced
  • Fresh parsley - 30 grams, chopped
  • Fresh mint - 15 grams, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Cauliflower - 300 grams, riced
  • Tomato - 1 medium, diced
  • Lemon - 1, juiced

Steps

  1. In a bowl, combine the ground lamb, minced garlic, chopped parsley, chopped mint, cumin, paprika, salt, and black pepper. Mix well until all ingredients are fully incorporated.
  2. Shape the mixture into elongated kebabs or meat rolls and refrigerate for 15 minutes to firm up.
  3. While the kebabs are chilling, prepare the cauliflower rice by pulsing the cauliflower florets in a food processor until they resemble rice grains.
  4. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the riced cauliflower and sauté for about 5-7 minutes, until tender. Season with salt and pepper to taste.
  5. Preheat a grill or grill pan over medium-high heat. Grill the kebabs for about 10-12 minutes, turning occasionally until cooked through and nicely charred.
  6. To serve, place the riced cauliflower on plates, top with grilled kebabs, and garnish with diced tomato and a squeeze of fresh lemon juice.
