- Lamb shoulder - 400 grams, cut into cubes
- Eggplants - 2 medium, about 300 grams
- Yogurt - 150 grams, plain
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped for garnish
Steps
- Preheat your grill or BBQ to medium-high heat.
- In a bowl, marinate the lamb cubes with olive oil, paprika, cumin, salt, and black pepper. Let it sit for at least 30 minutes.
- While the lamb is marinating, prepare the eggplants. Roast them over the grill or in the oven until the skin is charred and the flesh is soft, about 20-25 minutes.
- Once the eggplants are roasted, let them cool slightly, then scoop out the flesh and blend it with yogurt and minced garlic until smooth. Season with salt to taste.
- Grill the marinated lamb cubes for about 10-15 minutes, turning occasionally, until they are cooked to your desired doneness.
- To serve, spread the eggplant puree on a plate, top it with the grilled lamb, and garnish with chopped parsley.
