Ingredients

  • Lamb shoulder - 400 grams, cut into cubes
  • Eggplants - 2 medium, about 300 grams
  • Yogurt - 150 grams, plain
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped for garnish

Steps

  1. Preheat your grill or BBQ to medium-high heat.
  2. In a bowl, marinate the lamb cubes with olive oil, paprika, cumin, salt, and black pepper. Let it sit for at least 30 minutes.
  3. While the lamb is marinating, prepare the eggplants. Roast them over the grill or in the oven until the skin is charred and the flesh is soft, about 20-25 minutes.
  4. Once the eggplants are roasted, let them cool slightly, then scoop out the flesh and blend it with yogurt and minced garlic until smooth. Season with salt to taste.
