Ingredients

  • Lamb shoulder - 400 grams
  • Olive oil - 2 tablespoons
  • Garlic - 3 cloves, minced
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Red onion - 1 medium, cut into chunks
  • Bell pepper - 1 medium, cut into chunks
  • Yogurt (full-fat, unsweetened) - 100 grams
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Cut the lamb shoulder into 2.5 cm cubes and place them in a mixing bowl.
  2. In a separate bowl, mix the olive oil, minced garlic, cumin, paprika, black pepper, and salt to create a marinade.
  3. Pour the marinade over the lamb cubes and toss well to coat. Cover and refrigerate for at least 1 hour, preferably overnight.
  4. Soak wooden skewers in water for 30 minutes to prevent burning.
  5. Preheat the grill or BBQ to medium-high heat.
  6. Thread the marinated lamb, red onion, and bell pepper onto the skewers alternately.
  7. Grill the skewers for about 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
  8. While the skewers are grilling, mix the yogurt and lemon juice in a small bowl for the dipping sauce.
  9. Serve the grilled skewers hot, garnished with fresh parsley and accompanied by the yogurt sauce.
