- Lamb shoulder - 400 grams
- Olive oil - 2 tablespoons
- Garlic - 3 cloves, minced
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Red onion - 1 medium, cut into chunks
- Bell pepper - 1 medium, cut into chunks
- Yogurt (full-fat, unsweetened) - 100 grams
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Cut the lamb shoulder into 2.5 cm cubes and place them in a mixing bowl.
- In a separate bowl, mix the olive oil, minced garlic, cumin, paprika, black pepper, and salt to create a marinade.
- Pour the marinade over the lamb cubes and toss well to coat. Cover and refrigerate for at least 1 hour, preferably overnight.
- Soak wooden skewers in water for 30 minutes to prevent burning.
- Preheat the grill or BBQ to medium-high heat.
- Thread the marinated lamb, red onion, and bell pepper onto the skewers alternately.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
- While the skewers are grilling, mix the yogurt and lemon juice in a small bowl for the dipping sauce.
- Serve the grilled skewers hot, garnished with fresh parsley and accompanied by the yogurt sauce.
