Kuzu Kumpir

Ingredients

  • Sweet potatoes - 2 medium (about 500g each)
  • Lamb shoulder - 300g, diced
  • Olive oil - 2 tablespoons
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Rosemary - 1 teaspoon, fresh or dried
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash the sweet potatoes and pierce them several times with a fork. Place them on a baking tray and bake for about 45 minutes or until tender.
  3. While the potatoes are baking, heat the olive oil in a large skillet over medium heat. Add the diced lamb and cook until browned on all sides, about 5-7 minutes.
  4. Add the diced onion and garlic to the skillet, cooking until the onion becomes translucent, about 3-4 minutes.
  5. Stir in the diced carrot, red bell pepper, and zucchini. Cook for an additional 5-7 minutes until the vegetables soften.
  6. Season the mixture with rosemary, salt, black pepper, and paprika. Mix well and cook for another 2-3 minutes.
  7. Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Cut them in half lengthwise and scoop out a bit of the flesh, creating space for the filling.
  8. Fill each sweet potato half with the lamb and vegetable mixture, packing it in well.
  9. Garnish with fresh parsley before serving.
