Ingredients

  • Lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • Onion - 1 medium, grated
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Yogurt - 100 grams
  • Lemon juice - 1 tablespoon
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Bell pepper - 1 medium, cut into 2.5 cm pieces
  • Zucchini - 1 medium, sliced
  • Cherry tomatoes - 10 pieces
  • Pita bread - 2 pieces
  • Fresh parsley - for garnish

Steps

  1. In a mixing bowl, combine the grated onion, minced garlic, olive oil, yogurt, lemon juice, paprika, cumin, salt, and black pepper to create a marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.
  3. Preheat the grill or a grill pan over medium-high heat.
  4. While the grill is heating, prepare the vegetables. Skewer the bell pepper, zucchini slices, and cherry tomatoes onto separate skewers.
  5. Thread the marinated lamb onto skewers, leaving a little space between each piece for even cooking.
  6. Once the grill is hot, place the lamb skewers and vegetable skewers on the grill. Cook the lamb for about 8-10 minutes, turning occasionally until cooked to your desired doneness.
  7. Grill the vegetable skewers for about 5-7 minutes until tender and slightly charred.
  8. Warm the pita bread on the grill for 1-2 minutes on each side until soft and slightly toasted.
  9. Serve the lamb kebabs alongside the grilled vegetables and warm pita. Garnish with fresh parsley.
