Ingredients
- Lamb shoulder - 400 grams, cut into 2.5 cm cubes
- Onion - 1 medium, grated
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Yogurt - 100 grams
- Lemon juice - 1 tablespoon
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Bell pepper - 1 medium, cut into 2.5 cm pieces
- Zucchini - 1 medium, sliced
- Cherry tomatoes - 10 pieces
- Pita bread - 2 pieces
- Fresh parsley - for garnish
Steps
- In a mixing bowl, combine the grated onion, minced garlic, olive oil, yogurt, lemon juice, paprika, cumin, salt, and black pepper to create a marinade.
- Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for better flavor.
- Preheat the grill or a grill pan over medium-high heat.
- While the grill is heating, prepare the vegetables. Skewer the bell pepper, zucchini slices, and cherry tomatoes onto separate skewers.
- Thread the marinated lamb onto skewers, leaving a little space between each piece for even cooking.
- Once the grill is hot, place the lamb skewers and vegetable skewers on the grill. Cook the lamb for about 8-10 minutes, turning occasionally until cooked to your desired doneness.
- Grill the vegetable skewers for about 5-7 minutes until tender and slightly charred.
- Warm the pita bread on the grill for 1-2 minutes on each side until soft and slightly toasted.
- Serve the lamb kebabs alongside the grilled vegetables and warm pita. Garnish with fresh parsley.
