Ingredients

  • Lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • Onion - 1 medium, grated
  • Garlic - 2 cloves, minced
  • Olive oil - 3 tablespoons
  • Yogurt - 100 grams
  • Ground cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Skewers - 4 wooden or metal
  • Basmati rice - 150 grams
  • Water - 300 ml
  • Fresh parsley - for garnish

Steps

  1. In a bowl, combine grated onion, minced garlic, olive oil, yogurt, ground cumin, paprika, salt, and black pepper to create the marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to overnight for better flavor.
  3. Soak wooden skewers in water for 15 minutes if using, to prevent burning.
  4. Preheat your grill or grill pan over medium-high heat.
  5. Thread the marinated lamb onto skewers, leaving a little space between each piece for even cooking.
  6. Grill the skewers for about 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
  7. While the kebabs are grilling, rinse the basmati rice under cold water until the water runs clear to remove excess starch.
  8. In a saucepan, bring 300 ml of water to a boil. Add the rinsed rice and a pinch of salt, then reduce the heat to low and cover. Cook for about 15 minutes, or until the rice is tender and the water is absorbed.
  9. Fluff the rice with a fork and let it sit covered for a few minutes.
  10. Serve the grilled kuzu kebabs over a bed of fluffy rice, garnished with fresh parsley.
