- Yogurt - 100 grams
- Ground cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Skewers - 4 wooden or metal
- Basmati rice - 150 grams
- Water - 300 ml
- Fresh parsley - for garnish
Steps
- In a bowl, combine grated onion, minced garlic, olive oil, yogurt, ground cumin, paprika, salt, and black pepper to create the marinade.
- Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to overnight for better flavor.
- Soak wooden skewers in water for 15 minutes if using, to prevent burning.
- Preheat your grill or grill pan over medium-high heat.
- Thread the marinated lamb onto skewers, leaving a little space between each piece for even cooking.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
- While the kebabs are grilling, rinse the basmati rice under cold water until the water runs clear to remove excess starch.
- In a saucepan, bring 300 ml of water to a boil. Add the rinsed rice and a pinch of salt, then reduce the heat to low and cover. Cook for about 15 minutes, or until the rice is tender and the water is absorbed.
- Fluff the rice with a fork and let it sit covered for a few minutes.
- Serve the grilled kuzu kebabs over a bed of fluffy rice, garnished with fresh parsley.
