- Zucchini, sliced - 100 grams
- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)
Steps
- In a bowl, combine olive oil, yogurt, minced garlic, cumin, paprika, black pepper, salt, lemon juice, and chopped parsley to create a marinade.
- Add the cubed lamb to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat the grill or a grill pan over medium-high heat.
- Thread the marinated lamb, bell peppers, and zucchini onto the skewers, alternating between lamb and vegetables.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
- Remove from the grill and let rest for a few minutes before serving.
- Serve with a sprinkle of fresh parsley and a side of mixed greens, if desired.
