Ingredients

  • Lamb shoulder, cubed - 400 grams
  • Olive oil - 2 tablespoons
  • Yogurt - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley, chopped - 2 tablespoons
  • Bell peppers, cut into squares - 100 grams
  • Zucchini, sliced - 100 grams
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. In a bowl, combine olive oil, yogurt, minced garlic, cumin, paprika, black pepper, salt, lemon juice, and chopped parsley to create a marinade.
  2. Add the cubed lamb to the marinade, ensuring all pieces are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat the grill or a grill pan over medium-high heat.
  4. Thread the marinated lamb, bell peppers, and zucchini onto the skewers, alternating between lamb and vegetables.
  5. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
  6. Remove from the grill and let rest for a few minutes before serving.
  7. Serve with a sprinkle of fresh parsley and a side of mixed greens, if desired.
