- Lemon juice - 2 tablespoons
- Ground cumin - 1 teaspoon
- Ground coriander - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Red onion - 1 medium, cut into wedges
- Bell pepper - 1 medium, cut into 2.5 cm pieces
- Pita bread - 2 pieces
Steps
- In a mixing bowl, combine the olive oil, minced garlic, lemon juice, ground cumin, ground coriander, paprika, salt, and black pepper to create a marinade.
- Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to overnight for more flavor.
- Preheat a grill or grill pan over medium-high heat.
- Thread the marinated lamb cubes, red onion wedges, and bell pepper pieces onto skewers alternately.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the lamb is cooked to your preferred doneness.
- While the kebabs are grilling, warm the pita bread on the grill for 1-2 minutes on each side.
- Once cooked, remove the skewers from the grill and let them rest for a few minutes. Serve the kebabs with warm pita and garnish with fresh parsley.
