Ingredients

  • Lamb shoulder - 400 grams, cut into 2.5 cm cubes
  • Olive oil - 3 tablespoons
  • Garlic - 2 cloves, minced
  • Lemon juice - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Red onion - 1 medium, cut into wedges
  • Bell pepper - 1 medium, cut into 2.5 cm pieces
  • Pita bread - 2 pieces

Steps

  1. In a mixing bowl, combine the olive oil, minced garlic, lemon juice, ground cumin, ground coriander, paprika, salt, and black pepper to create a marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to overnight for more flavor.
  3. Preheat a grill or grill pan over medium-high heat.
  4. Thread the marinated lamb cubes, red onion wedges, and bell pepper pieces onto skewers alternately.
  5. Grill the skewers for about 10-12 minutes, turning occasionally, until the lamb is cooked to your preferred doneness.
  6. While the kebabs are grilling, warm the pita bread on the grill for 1-2 minutes on each side.
  7. Once cooked, remove the skewers from the grill and let them rest for a few minutes. Serve the kebabs with warm pita and garnish with fresh parsley.
