- Lamb head - 1 (approximately 1.5 kg)
- Olive oil - 3 tablespoons
- Garlic - 4 cloves, minced
- Paprika - 1 tablespoon
- Cumin - 1 teaspoon
- Black pepper - 1 teaspoon
- Salt - 1 teaspoon
- Lemon juice - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Red onion - 1, sliced thinly for garnish
Steps
- Begin by cleaning the lamb head thoroughly under cold running water, ensuring all blood and impurities are removed.
- In a large bowl, combine the olive oil, minced garlic, paprika, cumin, black pepper, salt, and lemon juice to create a marinade.
- Rub the marinade generously all over the lamb head, ensuring it's well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
- Preheat your grill to medium-high heat. If using charcoal, allow the coals to burn down until they are covered with ash.
- Once the grill is hot, place the marinated lamb head on the grill. Cook for about 45 minutes to 1 hour, turning occasionally, until the meat is tender and has a nice char.
- Check the internal temperature; it should reach at least 75°C (165°F). Remove the lamb head from the grill and let it rest for 10 minutes.
- After resting, chop the lamb head into servings, garnishing with fresh parsley and thinly sliced red onion before serving.
