Ingredients

  • Lamb shoulder - 300 grams, cut into 2.5 cm cubes
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Oregano - 1 teaspoon
  • Red onion - 1 medium, cut into wedges
  • Bell pepper - 1 medium, cut into chunks
  • Lemon - 1, juiced
  • Fresh parsley - 2 tablespoons, chopped
  • Plain Greek yogurt - 100 grams

Steps

  1. In a bowl, combine the olive oil, minced garlic, salt, black pepper, paprika, cumin, oregano, and lemon juice to create a marinade.
  2. Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
  3. Soak wooden skewers in water for 30 minutes to prevent burning.
  4. Preheat the grill to medium-high heat.
  5. Thread the marinated lamb, red onion wedges, and bell pepper chunks onto the soaked skewers, alternating between the meat and vegetables.
  6. Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
  7. While the skewers are cooking, mix the plain Greek yogurt with chopped parsley and a pinch of salt to make a simple herb sauce.
  8. Once cooked, remove the skewers from the grill and serve hot with the herb yogurt sauce on the side.
