Ingredients
- Lamb shoulder - 300 grams, cut into 2.5 cm cubes
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Oregano - 1 teaspoon
- Red onion - 1 medium, cut into wedges
- Bell pepper - 1 medium, cut into chunks
- Lemon - 1, juiced
- Fresh parsley - 2 tablespoons, chopped
- Plain Greek yogurt - 100 grams
Steps
- In a bowl, combine the olive oil, minced garlic, salt, black pepper, paprika, cumin, oregano, and lemon juice to create a marinade.
- Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best flavor.
- Soak wooden skewers in water for 30 minutes to prevent burning.
- Preheat the grill to medium-high heat.
- Thread the marinated lamb, red onion wedges, and bell pepper chunks onto the soaked skewers, alternating between the meat and vegetables.
- Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally, until the lamb is cooked to your desired doneness.
- While the skewers are cooking, mix the plain Greek yogurt with chopped parsley and a pinch of salt to make a simple herb sauce.
- Once cooked, remove the skewers from the grill and serve hot with the herb yogurt sauce on the side.
