Ingredients

  • Lamb shoulder - 400 grams, diced
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, chopped
  • Garlic - 3 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Eggplant - 1 small, diced
  • Tomato - 1 medium, diced
  • Tomato paste - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Ground cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Water - 250 ml

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until translucent, about 5 minutes.
  3. Add the diced lamb shoulder to the pot, browning on all sides for about 10 minutes.
  4. Stir in the diced red bell pepper, zucchini, eggplant, and tomato, cooking for another 5 minutes.
  5. Add the tomato paste, dried oregano, ground cumin, salt, and black pepper, mixing well.
  6. Pour in the water and bring the mixture to a boil.
  7. Reduce the heat to low, cover the pot, and let it simmer for about 60 minutes, or until the lamb is tender.
  8. Uncover the pot, stir in the chopped parsley, and cook for an additional 5 minutes.
  9. Serve hot, garnished with extra parsley if desired.
