- Lamb shoulder - 400 grams, diced
- Olive oil - 2 tablespoons
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Red bell pepper - 1 medium, diced
- Zucchini - 1 medium, diced
- Eggplant - 1 small, diced
- Tomato - 1 medium, diced
- Tomato paste - 1 tablespoon
- Dried oregano - 1 teaspoon
- Ground cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Water - 250 ml
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, and sauté until translucent, about 5 minutes.
- Add the diced lamb shoulder to the pot, browning on all sides for about 10 minutes.
- Stir in the diced red bell pepper, zucchini, eggplant, and tomato, cooking for another 5 minutes.
- Add the tomato paste, dried oregano, ground cumin, salt, and black pepper, mixing well.
- Pour in the water and bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 60 minutes, or until the lamb is tender.
- Uncover the pot, stir in the chopped parsley, and cook for an additional 5 minutes.
- Serve hot, garnished with extra parsley if desired.
