Ingredients

  • Lamb shoulder - 300 grams, diced
  • Basmati rice - 150 grams, rinsed
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Tomato - 1 medium, diced
  • Olive oil - 2 tablespoons
  • Chicken or beef broth - 400 milliliters
  • Bay leaf - 1
  • Cinnamon stick - 1
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent.
  2. Add the minced garlic and diced carrot to the pot, cooking for an additional 2-3 minutes until softened.
  3. Add the diced lamb shoulder to the pot, stirring until the meat is browned on all sides.
  4. Stir in the diced tomato, bay leaf, cinnamon stick, salt, and black pepper. Cook for 5 minutes until the tomato is softened.
  5. Pour in the broth and bring the mixture to a boil. Reduce the heat to low, cover, and let it simmer for about 30 minutes until the lamb is tender.
  6. Remove the bay leaf and cinnamon stick. Add the rinsed basmati rice to the pot, stirring to combine with the lamb and broth.
  7. Cover the pot again and cook on low heat for an additional 15-20 minutes, or until the rice is fully cooked and has absorbed the liquid.
  8. Fluff the rice with a fork and let it sit for 5 minutes before serving. Garnish with fresh parsley.
