  • Tomato paste - 1 tablespoon
  • Vegetable broth - 500 ml
  • Dried thyme - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - to taste

  • Chickpeas - 100 grams, cooked
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a pot over medium heat and sauté the chopped onion and minced garlic until translucent.
  2. Add the diced carrots, potatoes, zucchini, and red bell pepper to the pot, and cook for about 5 minutes, stirring occasionally.
  3. Stir in the tomato paste, dried thyme, cumin, salt, and black pepper, mixing well to combine.
  4. Pour in the vegetable broth and bring the mixture to a boil.

  6. Add the cooked chickpeas to the pot and simmer for an additional 5 minutes.
