- Lamb shoulder - 300 grams, diced
- Bulgur wheat - 150 grams
- Onion - 1 medium, finely chopped
- Carrot - 1 medium, diced
- Tomato - 1 medium, diced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Water - 500 milliliters
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Bay leaf - 1
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced carrot to the pot, cooking for another 2-3 minutes until the carrot softens.
- Stir in the diced lamb shoulder, cooking until browned on all sides, approximately 10 minutes.
- Add the diced tomato, salt, black pepper, cumin, paprika, and bay leaf. Mix well and let cook for 5 minutes.
- Pour in the water, bring to a simmer, then cover and reduce heat to low. Cook for 30 minutes, until the lamb is tender.
- Remove the bay leaf and stir in the bulgur wheat. Cover the pot and let it sit for 15 minutes to allow the bulgur to absorb the liquid.
- Fluff the bulgur with a fork, garnish with fresh parsley, and serve hot.
