Ingredients

  • Lamb shoulder - 300 grams, diced
  • Bulgur wheat - 150 grams
  • Onion - 1 medium, finely chopped
  • Carrot - 1 medium, diced
  • Tomato - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Water - 500 milliliters
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Bay leaf - 1
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and diced carrot to the pot, cooking for another 2-3 minutes until the carrot softens.
  3. Stir in the diced lamb shoulder, cooking until browned on all sides, approximately 10 minutes.
  4. Add the diced tomato, salt, black pepper, cumin, paprika, and bay leaf. Mix well and let cook for 5 minutes.
  5. Pour in the water, bring to a simmer, then cover and reduce heat to low. Cook for 30 minutes, until the lamb is tender.
  6. Remove the bay leaf and stir in the bulgur wheat. Cover the pot and let it sit for 15 minutes to allow the bulgur to absorb the liquid.
  7. Fluff the bulgur with a fork, garnish with fresh parsley, and serve hot.
