- Zucchini - 2 medium-sized
- Ground lamb - 200 grams

- Onion - 1 small, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 2 tablespoons
- Diced tomatoes - 200 grams (fresh or canned)
- Red pepper flakes - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Spiralize the zucchini using a spiralizer to create zucchini noodles and set aside.
- In a skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
- Add minced garlic to the skillet and cook for an additional 1 minute until fragrant.
- Add the ground lamb to the skillet, breaking it apart with a wooden spoon, and cook until browned, about 6-7 minutes.
- Stir in the tomato paste, diced tomatoes, red pepper flakes, salt, and black pepper, mixing well to combine.
- Simmer the meat sauce on low heat for about 10 minutes, allowing the flavors to meld.
- In a separate pan, lightly sauté the zucchini noodles for 2-3 minutes until just tender.
- Divide the zucchini noodles between two plates and top with the lamb sauce.
- Garnish with fresh parsley before serving.
