Ingredients

  • Zucchini - 2 medium-sized
  • Ground lamb - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Diced tomatoes - 200 grams (fresh or canned)
  • Red pepper flakes - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Spiralize the zucchini using a spiralizer to create zucchini noodles and set aside.
  2. In a skillet, heat the olive oil over medium heat and sauté the chopped onion until translucent, about 3-4 minutes.
  3. Add minced garlic to the skillet and cook for an additional 1 minute until fragrant.
  4. Add the ground lamb to the skillet, breaking it apart with a wooden spoon, and cook until browned, about 6-7 minutes.
  5. Stir in the tomato paste, diced tomatoes, red pepper flakes, salt, and black pepper, mixing well to combine.
  6. Simmer the meat sauce on low heat for about 10 minutes, allowing the flavors to meld.
  7. In a separate pan, lightly sauté the zucchini noodles for 2-3 minutes until just tender.
  8. Divide the zucchini noodles between two plates and top with the lamb sauce.
  9. Garnish with fresh parsley before serving.
