Ingredients

  • Basmati rice - 150 grams
  • Water - 300 milliliters
  • Olive oil - 2 tablespoons
  • Onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Raisins - 50 grams
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Pine nuts - 30 grams, toasted
  • Fresh parsley - 1 tablespoon, chopped (for garnish)

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium-sized pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the soaked rice, raisins, salt, black pepper, and cinnamon. Mix everything well to coat the rice with the oil and spices.
  5. Add the water to the pot and bring it to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-18 minutes, or until the rice is cooked and the water is absorbed.
  6. Remove the pot from heat and let it sit, covered, for another 5 minutes.
  7. Fluff the rice with a fork and stir in the toasted pine nuts. Garnish with chopped parsley before serving.
