- Basmati rice - 150 grams
- Water - 300 milliliters
- Olive oil - 2 tablespoons
- Onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Raisins - 50 grams
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cinnamon - 1/2 teaspoon
- Pine nuts - 30 grams, toasted
- Fresh parsley - 1 tablespoon, chopped (for garnish)
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium-sized pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the soaked rice, raisins, salt, black pepper, and cinnamon. Mix everything well to coat the rice with the oil and spices.
- Add the water to the pot and bring it to a boil. Once boiling, reduce the heat to low, cover, and simmer for 15-18 minutes, or until the rice is cooked and the water is absorbed.
- Remove the pot from heat and let it sit, covered, for another 5 minutes.
- Fluff the rice with a fork and stir in the toasted pine nuts. Garnish with chopped parsley before serving.
