Steps

  1. In a medium saucepan, combine the dried sour cherries and water. Bring to a boil over medium heat, then reduce to low and simmer for about 10 minutes until the cherries soften.
  2. Add sugar, vanilla extract, and ground cinnamon to the pan, stirring until the sugar is fully dissolved.
  3. In a small bowl, mix the cornstarch with a few tablespoons of cold water to create a slurry. Gradually add this slurry to the cherry mixture, stirring constantly until the mixture thickens, about 2-3 minutes.
  4. Remove from heat and let it cool to room temperature, then refrigerate for at least 15 minutes to chill.
  5. Once chilled, divide the cherry mixture into two serving bowls and sprinkle chopped walnuts on top. Optionally, dust with powdered sugar before serving.
