Steps
- In a medium saucepan, combine the dried sour cherries and water. Bring to a boil over medium heat, then reduce to low and simmer for about 10 minutes until the cherries soften.
- Add sugar, vanilla extract, and ground cinnamon to the pan, stirring until the sugar is fully dissolved.
- In a small bowl, mix the cornstarch with a few tablespoons of cold water to create a slurry. Gradually add this slurry to the cherry mixture, stirring constantly until the mixture thickens, about 2-3 minutes.
- Remove from heat and let it cool to room temperature, then refrigerate for at least 15 minutes to chill.
- Once chilled, divide the cherry mixture into two serving bowls and sprinkle chopped walnuts on top. Optionally, dust with powdered sugar before serving.
