- Dried eggplants - 4 pieces
- Long-grain rice - 150 grams
- Onion - 1 medium, finely chopped
- Tomato - 1 medium, diced
- Green bell pepper - 1 medium, diced
- Olive oil - 3 tablespoons
- Vegetable broth - 400 milliliters
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon
- Pine nuts - 30 grams
- Raisins - 30 grams
- Fresh parsley - 2 tablespoons, chopped
Steps
- Soak the dried eggplants in warm water for about 30 minutes until they soften. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the diced tomato and green bell pepper to the skillet. Cook for 5 minutes until softened.
- Stir in the rice, pine nuts, raisins, cinnamon, salt, and black pepper. Mix well and cook for another 2 minutes.
- Pour in the vegetable broth and bring to a boil. Reduce heat, cover, and let simmer for 15 minutes until the rice is cooked and liquid is absorbed.
- Stuff the softened eggplants with the rice mixture and place them upright in a pot. Add any remaining broth to the pot and cover.
- Cook on low heat for an additional 20 minutes, allowing the eggplants to absorb the flavors.
- Garnish with fresh parsley before serving.
