Ingredients

  • Dried eggplants - 4 pieces
  • Long-grain rice - 150 grams
  • Onion - 1 medium, finely chopped
  • Tomato - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Olive oil - 3 tablespoons
  • Vegetable broth - 400 milliliters
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Pine nuts - 30 grams
  • Raisins - 30 grams
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Soak the dried eggplants in warm water for about 30 minutes until they soften. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the diced tomato and green bell pepper to the skillet. Cook for 5 minutes until softened.
  4. Stir in the rice, pine nuts, raisins, cinnamon, salt, and black pepper. Mix well and cook for another 2 minutes.
  5. Pour in the vegetable broth and bring to a boil. Reduce heat, cover, and let simmer for 15 minutes until the rice is cooked and liquid is absorbed.
  6. Stuff the softened eggplants with the rice mixture and place them upright in a pot. Add any remaining broth to the pot and cover.
  7. Cook on low heat for an additional 20 minutes, allowing the eggplants to absorb the flavors.
  8. Garnish with fresh parsley before serving.
