Ingredients

  • Dried eggplants - 4 pieces
  • Long-grain rice - 100 grams
  • Olive oil - 3 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 1 tablespoon
  • Red bell pepper - 1 medium, finely chopped
  • Green bell pepper - 1 medium, finely chopped
  • Pine nuts - 30 grams
  • Raisins - 30 grams
  • Vegetable broth - 250 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Dried mint - 1 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Soak the dried eggplants in hot water for about 30 minutes to soften them. Drain and set aside.
  2. In a pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute, then stir in the tomato paste and cook for 2 more minutes.
  4. Add the red and green bell peppers to the pan and sauté for 5 minutes until they soften.
  5. Stir in the pine nuts, raisins, rice, salt, black pepper, cinnamon, and dried mint. Cook for 2 minutes, stirring frequently.
  6. Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes until the rice is cooked and the liquid is absorbed.
  7. Remove the pan from heat and stir in the chopped parsley and lemon juice.
  8. Stuff each softened eggplant with the rice mixture, packing it gently. Place the stuffed eggplants in a pot.
  9. Add enough water to the pot to cover the eggplants halfway. Cover and simmer over low heat for 30-40 minutes until the eggplants are tender.
  10. Serve warm, garnished with additional parsley if desired.
