- Dried eggplants - 4 pieces
- Long-grain rice - 100 grams
- Olive oil - 3 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 1 tablespoon
- Red bell pepper - 1 medium, finely chopped
- Green bell pepper - 1 medium, finely chopped
- Pine nuts - 30 grams
- Raisins - 30 grams
- Vegetable broth - 250 ml
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cinnamon - 1/4 teaspoon
- Dried mint - 1 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Soak the dried eggplants in hot water for about 30 minutes to soften them. Drain and set aside.
- In a pan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for another minute, then stir in the tomato paste and cook for 2 more minutes.
- Add the red and green bell peppers to the pan and sauté for 5 minutes until they soften.
- Stir in the pine nuts, raisins, rice, salt, black pepper, cinnamon, and dried mint. Cook for 2 minutes, stirring frequently.
- Pour in the vegetable broth and bring to a boil. Reduce the heat to low, cover, and simmer for 15 minutes until the rice is cooked and the liquid is absorbed.
- Remove the pan from heat and stir in the chopped parsley and lemon juice.
- Stuff each softened eggplant with the rice mixture, packing it gently. Place the stuffed eggplants in a pot.
- Add enough water to the pot to cover the eggplants halfway. Cover and simmer over low heat for 30-40 minutes until the eggplants are tender.
- Serve warm, garnished with additional parsley if desired.
