- Shredded coconut - 100 grams
- Sugar - 50 grams
- Water - 50 milliliters
- Walnuts, finely chopped - 50 grams
- Butter - 30 grams
- Vanilla extract - 1 teaspoon
- Cinnamon - 1/2 teaspoon
- Salt - a pinch
Steps
- In a saucepan, combine sugar and water. Bring to a boil over medium heat, stirring until the sugar dissolves completely.
- Add the shredded coconut to the sugar syrup and mix well. Cook for about 5 minutes until the mixture thickens slightly.
- Remove the coconut mixture from heat and let it cool for a few minutes. Once cooled, divide it into two equal parts.
- In a skillet, melt the butter over medium heat. Add the chopped walnuts, cinnamon, and a pinch of salt. Sauté for about 3-4 minutes until the walnuts are slightly golden and fragrant.
- Take one part of the coconut mixture and flatten it into a rectangular shape on a piece of parchment paper. Place half of the walnut mixture in the center and roll the coconut mixture over it to form a log shape.
- Repeat the process with the second part of the coconut mixture and remaining walnut filling.
- Chill the logs in the refrigerator for at least 15 minutes to firm up.
- Once chilled, slice the logs into bite-sized pieces and serve.
