Ingredients

  • Shredded coconut - 100 grams
  • Sugar - 50 grams
  • Water - 50 milliliters
  • Walnuts, finely chopped - 50 grams
  • Butter - 30 grams
  • Vanilla extract - 1 teaspoon
  • Cinnamon - 1/2 teaspoon
  • Salt - a pinch

Steps

  1. In a saucepan, combine sugar and water. Bring to a boil over medium heat, stirring until the sugar dissolves completely.
  2. Add the shredded coconut to the sugar syrup and mix well. Cook for about 5 minutes until the mixture thickens slightly.
  3. Remove the coconut mixture from heat and let it cool for a few minutes. Once cooled, divide it into two equal parts.
  4. In a skillet, melt the butter over medium heat. Add the chopped walnuts, cinnamon, and a pinch of salt. Sauté for about 3-4 minutes until the walnuts are slightly golden and fragrant.
  5. Take one part of the coconut mixture and flatten it into a rectangular shape on a piece of parchment paper. Place half of the walnut mixture in the center and roll the coconut mixture over it to form a log shape.
  6. Repeat the process with the second part of the coconut mixture and remaining walnut filling.
  7. Chill the logs in the refrigerator for at least 15 minutes to firm up.
  8. Once chilled, slice the logs into bite-sized pieces and serve.
