- Almonds - 30 grams, chopped
- Agave syrup - 2 tablespoons
- Cinnamon - 1/2 teaspoon
- Vanilla extract - 1/2 teaspoon
- Water - 1/2 cup
- Sesame seeds - 2 tablespoons, for garnish
Steps
- In a small saucepan, bring the water to a boil and remove from heat.
- Add the dried apricots to the boiling water and let them soak for about 10 minutes until they soften.
- In a mixing bowl, combine the chopped walnuts, chopped almonds, agave syrup, cinnamon, and vanilla extract. Mix well to form the filling.
- Once the apricots are softened, remove them from the water and gently pat them dry with a paper towel.
- Carefully open each apricot and stuff it with the nut filling, pressing gently to close.
- Arrange the stuffed apricots on a serving plate and drizzle with a little extra agave syrup if desired.
