Ingredients

  • Dried strawberries - 100 grams
  • Water - 200 ml
  • Sugar - 50 grams
  • Cornstarch - 20 grams
  • Yogurt - 150 grams
  • Honey - 1 tablespoon
  • Chopped pistachios - 20 grams
  • Vanilla extract - 1 teaspoon

Steps

  1. In a small pot, combine the dried strawberries, water, and sugar. Bring to a boil over medium heat.
  2. Reduce heat and simmer for about 10 minutes, allowing the strawberries to soften and the mixture to thicken.
  3. In a separate bowl, mix the cornstarch with a little water to create a slurry. Stir this into the simmering strawberry mixture and cook for another 5 minutes until thickened.
  4. Remove from heat and let the mixture cool slightly before transferring it to serving bowls.
  5. In a separate bowl, combine the yogurt, honey, and vanilla extract. Mix well until smooth and creamy.
  6. Once the strawberry mixture has cooled down, spoon the yogurt sauce over the top of the strawberries in each bowl.
  7. Sprinkle the chopped pistachios on top for added crunch and flavor. Serve immediately or chill in the refrigerator for a refreshing treat.
