Ingredients

  • All-purpose flour - 200 grams
  • Warm water - 120 ml
  • Active dry yeast - 5 grams
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Canned white beans (drained and rinsed) - 200 grams
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Tomato paste - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. In a small bowl, dissolve the active dry yeast in warm water and let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine the all-purpose flour and salt. Make a well in the center and add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth and elastic. Place it in a greased bowl, cover with a cloth, and let it rise in a warm place for about 30 minutes.
  4. While the dough is rising, prepare the filling. In a pan, heat a little olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  5. Add the drained white beans, tomato paste, cumin, paprika, and black pepper to the pan. Cook for about 5-7 minutes, stirring occasionally, until heated through. Remove from heat and stir in the chopped parsley and lemon juice.
  6. Preheat the oven to 220°C (428°F).
  7. Once the dough has risen, divide it into two equal portions. Roll each portion into an oval shape about 1/2 cm thick.
  8. Place the rolled dough on a baking sheet lined with parchment paper. Spoon the bean filling onto the center of each dough oval, leaving a border around the edges.
  9. Fold the edges of the dough over the filling to create a boat shape, pinching the ends to seal.
  10. Bake in the preheated oven for 15-20 minutes or until the dough is golden brown.
  11. Remove from the oven and let cool slightly before slicing. Serve warm.
