Ingredients
- Dried white beans - 100 grams
- Long-grain rice - 150 grams
- Water - 500 milliliters (for beans) + 300 milliliters (for rice)
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Tomato paste - 1 tablespoon
- Canned diced tomatoes - 200 grams
- Red pepper flakes - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Soak the dried white beans in water overnight. Drain and rinse before cooking.
- In a pot, bring 500 milliliters of water to a boil and add the soaked beans. Cook for about 30-40 minutes until tender. Drain and set aside.
- In a separate saucepan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for another minute until fragrant.
- Stir in the tomato paste and canned diced tomatoes, cooking for 2-3 minutes until combined.
- Add the cooked white beans, red pepper flakes, salt, and black pepper. Stir well and let simmer for 10 minutes to combine flavors.
- While the bean mixture simmers, rinse the long-grain rice under cold water until the water runs clear. In a separate pot, bring 300 milliliters of water to a boil.
- Add the rinsed rice to the boiling water, reduce heat to low, cover, and cook for 15 minutes or until the rice is tender and water is absorbed.
- Fluff the rice with a fork and serve topped with the bean mixture. Garnish with fresh parsley.
