Ingredients

  • Dried white beans - 100 grams
  • Long-grain rice - 150 grams
  • Water - 500 milliliters (for beans) + 300 milliliters (for rice)
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 1 tablespoon
  • Canned diced tomatoes - 200 grams
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Soak the dried white beans in water overnight. Drain and rinse before cooking.
  2. In a pot, bring 500 milliliters of water to a boil and add the soaked beans. Cook for about 30-40 minutes until tender. Drain and set aside.
  3. In a separate saucepan, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  4. Add the minced garlic and sauté for another minute until fragrant.
  5. Stir in the tomato paste and canned diced tomatoes, cooking for 2-3 minutes until combined.
  6. Add the cooked white beans, red pepper flakes, salt, and black pepper. Stir well and let simmer for 10 minutes to combine flavors.
  7. While the bean mixture simmers, rinse the long-grain rice under cold water until the water runs clear. In a separate pot, bring 300 milliliters of water to a boil.
  8. Add the rinsed rice to the boiling water, reduce heat to low, cover, and cook for 15 minutes or until the rice is tender and water is absorbed.
  9. Fluff the rice with a fork and serve topped with the bean mixture. Garnish with fresh parsley.
