- Dried white beans - 150 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Tomato paste - 1 tablespoon
- Chopped tomatoes - 200 grams (fresh or canned)
- Bell pepper - 1 medium, diced
- Carrot - 1 medium, diced
- Vegetable broth - 500 milliliters
- Salt - 1 teaspoon (adjust to taste)
- Black pepper - 1/2 teaspoon
- Paprika - 1 teaspoon
- Bay leaf - 1
- Fresh parsley - for garnish
Steps
- Soak the dried white beans in water overnight, then drain and rinse them.
- In a pot, heat the olive oil over medium heat, and sauté the diced onion until translucent, about 5 minutes.
- Add the minced garlic and diced bell pepper, cooking for another 2-3 minutes until softened.
- Stir in the tomato paste, chopped tomatoes, diced carrot, salt, black pepper, paprika, and bay leaf. Cook for 5 minutes, allowing the flavors to meld.
- Add the soaked beans and vegetable broth to the pot. Bring to a boil, then reduce to a simmer.
- Cover and cook for about 40 minutes, or until the beans are tender, stirring occasionally and adding more broth if necessary.
- Once cooked, remove the bay leaf and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
