  • Dried white beans - 150 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Tomato paste - 1 tablespoon
  • Chopped tomatoes - 200 grams (fresh or canned)
  • Bell pepper - 1 medium, diced
  • Carrot - 1 medium, diced
  • Vegetable broth - 500 milliliters
  • Salt - 1 teaspoon (adjust to taste)
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Bay leaf - 1
  • Fresh parsley - for garnish

Steps

  1. Soak the dried white beans in water overnight, then drain and rinse them.
  2. In a pot, heat the olive oil over medium heat, and sauté the diced onion until translucent, about 5 minutes.
  3. Add the minced garlic and diced bell pepper, cooking for another 2-3 minutes until softened.
  4. Stir in the tomato paste, chopped tomatoes, diced carrot, salt, black pepper, paprika, and bay leaf. Cook for 5 minutes, allowing the flavors to meld.
  5. Add the soaked beans and vegetable broth to the pot. Bring to a boil, then reduce to a simmer.
  6. Cover and cook for about 40 minutes, or until the beans are tender, stirring occasionally and adding more broth if necessary.
  7. Once cooked, remove the bay leaf and adjust seasoning if needed. Serve hot, garnished with fresh parsley.
