- Sun-dried tomatoes - 100 grams

- Garlic - 2 cloves, minced
- Fresh parsley - 2 tablespoons, chopped
- Red pepper flakes - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Whole grain bread - 2 slices
Steps
- Soak the sun-dried tomatoes in warm water for about 10 minutes until they soften, then drain and chop them coarsely.
- In a skillet, heat the olive oil over medium heat and add minced garlic, sautéing until fragrant, about 1 minute.
- Add the chopped sun-dried tomatoes to the skillet along with red pepper flakes, salt, and black pepper. Cook for another 5 minutes, stirring occasionally.
- Remove the skillet from heat and stir in the chopped parsley and lemon juice, mixing well.
- Toast the whole grain bread slices until golden brown.
- Serve the sun-dried tomato mixture on top of the toasted bread, garnishing with extra parsley if desired.
