Ingredients

  • Sun-dried tomatoes - 100 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Red pepper flakes - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Whole grain bread - 2 slices

Steps

  1. Soak the sun-dried tomatoes in warm water for about 10 minutes until they soften, then drain and chop them coarsely.
  2. In a skillet, heat the olive oil over medium heat and add minced garlic, sautéing until fragrant, about 1 minute.
  3. Add the chopped sun-dried tomatoes to the skillet along with red pepper flakes, salt, and black pepper. Cook for another 5 minutes, stirring occasionally.
  4. Remove the skillet from heat and stir in the chopped parsley and lemon juice, mixing well.
  5. Toast the whole grain bread slices until golden brown.
  6. Serve the sun-dried tomato mixture on top of the toasted bread, garnishing with extra parsley if desired.
